Lothar Galloo and Margaux Rivaux first crossed paths in 2018 while working for Pierre Fenals at Maison En Belles Lies. Brought together by their shared passion for winemaking, they decided to create something of their own in the heart of Burgundy.
After an extensive search, they found their base in the picturesque commune of Baubigny, just south of Saint-Romain. There, they secured a spacious underground cellar at an affordable price, providing the ideal space to bring their vision to life.
They started by renting 2.5 hectares of vineyards across Saint-Aubin, Auxey-Duresses, Bouzeron, Hautes-Côtes de Beaune, and another 2 hectares in Beaujolais. Margaux, who had been working with Pierre Fenals on biodynamic practices since 2016, and Lothar, who gained experience with Bruno Schueller in Alsace, Didier Barral in Languedoc, and from growing up in an organic vegetable-farming family, brought a wealth of expertise and dedication to their work.
They committed to cultivating their vineyards without herbicides, pesticides, or synthetic chemicals, carefully aligning every step with the rhythms of the lunar calendar. Their shared vision and respect for the land are at the core of their winemaking approach.
In the cellar, Lothar and Margaux focused on minimal intervention, allowing the vintage and the unique terroir of each plot to speak for themselves. Their winemaking philosophy was rooted in precision, balance, and a deep commitment to authenticity. All their wines are unfined and unfiltered, with only a small amount of sulphites added just before bottling.
For such a young winery, the results have been truly impressive. Much like the couple, Margaux brings vibrant energy, while Lothar embodies a calm and thoughtful presence. This dynamic partnership shines through in their wines, which enchant the senses with their exceptional craftsmanship and unmistakable character.
